COMPARATIVE ASSESSMENT OF COCONUT OILS PROCESSED FROM DRY AND WET EXTRACTION TECHNIQUES | Journal..

Dry and wet extraction methods were used to investigate the production and characterisation of coconut oil in this study. Both dry and wet processes provided oil to variable degrees of 42.13 percent and 31.94 percent, respectively. The qualities of the oils that were generated differed. To verify significant variations in sample means, the data gathered during this inquiry was statistically examined using the Paired Two Sample for Means t-Test. In terms of freshness and oil spoilage characteristics, however, the physiochemical qualities of the oil from wet extraction were marginally but considerably better than those of the oil from dry extraction. The slightly inferior quality of the dry extracted oil was attributed to possible oxidation of the oil in the coconut meat prior to extraction due to drying exposure. In general, the Coconut Oils produced in this study had satisfactory qualities that met established Coconut Oil requirements. This technique for producing Coconut Oil will aid companies in producing high-quality products.
